The "brodetto" (fish stew)
This tasty seafood specialty has always existed along the fishermen and it is said that where there is a port, there is a recipe for "brodetto" (fish stew). It is a soup with different qualities of fish from the Adriatic Sea, cooked over low heat and enriched with local flavors and extra virgin olive oil at the end of cooking. In the Conero area, the traditional brodettos that you can taste are represented by the Ancona and Porto Recanati variants: the challenge for the best brodetto is open!
